Vertically roasted chicken
We got a vertical roaster from here.
The skin crisps all round, all the fat drains out and the liquid you add makes the meat wonderfully moist.
Preheat oven to 180 degrees C.
Place the top piece of the vertical roaster into the belly cavity, secure with a skewer, place the liquid of your choice (beer, wine etc.) into the bottom bowl and roast for 1 1/2 hours.
It's quite tall so you may need to move the racks around. Depending on how close the chicken is to the top element, you may need to either lower the temperature towards the end or cover the top with aluminium foil.
